Lamb and Cumin
I’ve long been a fan of them from the Chinatown night markets, but this time, they just weren’t bringing it. Usually, they operate a single stall in the middle of billowing smoke that makes you smell exactly like the skewers you’re just about to receive, and the succulent lamb comes out hot, juicy, and threaded with the all important lamb fat interspersed with the meat. Ambience aside, these ones were just a touch overcooked and so dryer in texture, and it just didnt have the same smoked and spice kick that I’m so used to at the night markets.
Maybe that’s it. They just need less ventilation.
