So we all know that I hate HATE food waste. And part of how I deal with leftovers at home is to transform it into something else entirely, so that I can use up every last bit of food!
Well, I recently made my own black garlic, AND made my own butter. So what do you do with a MASSIVE amount of garlic and butter sitting in your fridge? Garlic butter. Yes, it’s that easy.
I adore the savoury flavours of miso, and I think that it brings out a certain richness in the black garlic very nicely. And that winning combination applies itself to a whole lot of other things, too. Dressings, sauces…you name it, we can make it.
But for now, just the butter. A butter that will sit waiting in your freezer to lift an otherwise boring meal with rich, savoury notes. Luxurious, dahling!
Black Garlic Miso Butter Recipe
Ingredients
- 250 g butter
- 10 cloves black garlic more, if you like it
- 2 tbsp miso heaped
- 1 tbsp lemon juice
Instructions
- Place all ingredients in food processor and process till smooth and mixed.
- Pipe/spread onto cling wrap or baking paper, and shape into a log.
- Refrigerate or freeze till firm, and wrap in foil to store.
At the risk of tooting my own horn, I HAVE TO tell you that this black garlic miso butter is good. This black garlic miso butter is SO GOOD that I just eat pieces of it. Straight. Bread optional. One of my best works!
