Sea Urchin: My chat with John from Cando Fishing

Meet John Shea. I met him as I was walking along an aisle at the Fine Food Australia trade fair, absolutely starving. John offered a friendly smile and some fabulous mussels, and then as we got chatting, he offered me some sea urchin. SEA URCHIN. Some of the freshest, plumpest, most delicious sea urchin I’ve ever had. So of course I had to find out more.

From my chat with John, I learnt that the Sea Urchin has five tongues, which are hold the tasty bits roe of the urchin. Each urchin has about three million eggs, spread out over the five tongues. They eat kelp, and pretty much all of their energy is diverted to reproducing.

And as with any living produce, there is most definitely a season to sea urchin. According to John, there is a saying in New Zealand, which is that the sea urchin is ‘ripe’ when the pohutukawa (a plant) is in bloom. This means that the sea urchin harvesting season corresponds to summer, which is when this particular plant is in bloom.

So what is a ‘ripe’ sea urchin? And why harvest in summer?

Well, it turns out that when the water is cold (during winter), it’s not a good time to spawn. And since we’re basically eating the reproductive organs of the sea urchin, that means that not a good time for spawning = no roe. But in the lead up to the warmer months, the sea urchin start gearing up for reproduction, meaning that the tongues start getting plump and firm, and swelling up, ready to ‘give birth’. This is the best time to harvest and eat sea urchin, because you end up with an amazing, fresh, plump product.

If you harvest them too late, then well…we all know that birthing can be a traumatic event.

The colour of the sea urchin also varies. Some are a light yellow, and varies right into a dark brown. All of that just really has to do with the fact that mother nature doesn’t quite make everything consistent, and the dark brown sea urchin, while not as pretty in presentation, is still just as yummy. Trust me, I’ve tried.

If you want to go out and get some of this deliciousness for yourself, then be sure to pick urchin that is plump and firm – not watery – and smells like the sea. If it smells fishy, then it’s no good – sea urchin has a pretty short shelf life. Even better when you can see the little roe – it should look rough like the surface of your tongue. If you were eating it straight, I would definitely suggest that you can get them plump if you can – it’s so worthwhile for the texture and flavour that they provide.

The urchin that I’ve tried from Cando fishing is MASSIVE by the standards that I’ve seen in most reputable Japanese restaurants. I’ve never had urchin as satisfying and decadent, and I’m not saying this because John was lovely enough to give me product to sample. They are really quite versatile, and delicious, and it’s inspired me to come up with a few recipes with sea urchin.

Blood Orange Sorbet

Recently, I attended the Fine Food Australia Trade Fair at the Darling Harbour Exhibition Centre. I got chatting to the exhibitors, naturally, and got to know the fabulous people at Red Belly Citrus, who produce blood oranges that are the gorgeous colour of red wine.

Blood oranges, if you’ve never had them, taste to me like a more tart orange, but not quite as astringent as a grapefruit. Curiously addictive, this fruit is fantastic as a refresher and as a palate cleanser. I was very lucky to score a 2L bottle of juice from Red Belly Citrus, and managed to stop myself from polishing off the bottle for long enough to make some sorbet!

There are only a couple of principles to follow in sorbet:

  • Too much sugar, and your sorbet won’t freeze and become just an ice slushy. Sugar prevents ice crystals from forming, and it helps keep your sorbet soft. Now large ice crystals = crunchy, small ice crystals = smooth, not enough ice crystals = drink.
  • Too little sugar, and your sorbet will freeze too hard and become crunchy like a granita
  • If you’re using alcohol, don’t use too much of it or you’ll get the slushy thing happening again.
  • For every cup of liquid, you’re using a quarter of a cup of sugar. I was lucky to get blood orange juice, pulp and all, so that ratio works. Of course, if you’re using a fruit drink instead of a fruit juice – meaning that there is already added sugar – then you’d have to adjust and lessen the amount of sugar used.

But really, with summer round the corner, there shouldn’t be any issue getting the fresh stuff.

I dissolved the sugar over low heat in half the juice, then added the rest and made sure that the mixture was thoroughly chilled. Why chill it first? Well when the mixture freezes quickly, it doesn’t give large ice crystals the opportunity to form. Which means a smooth sorbet.

Then churn the mixture according to your ice cream machine instructions, and add just a touch of vodka or other liqueur at the end if you really want to. I used 2 teaspoons of vodka for 750ml of liquid. It’s not for flavour, more for those above-mentioend reasons.

Then top with your favourite garnishes – I used pomegranate seeds and mint from the garden – and serve! I put mine in shot glasses because I was doing canapés, but hey, eat it out of the tub if you want to. I do. =)

What I Ate: Twice Cooked Pork Belly Braise

You read a recipe that you like, often written for four or six, and then you make it, only to find that even though the both of you are stuffed, there’s still plenty of leftover to go around. Sure, you can halve the recipe, but sometimes that really affects cooking times, and I find it easier just to try and do something interesting with the leftovers!

What I ate: Shredded lamb pasta

So I had a satisfying roasted lamb over the weekend, but seeing as how I roasted a whole 2+kg lamb shoulder, I was bound to have leftovers. Well, waste not want not, and I think this is a fantastic way to use up those bits of lamb left in your fridge.

For space, I shredded the lamb after the roast had cooled and store it away in an airtight container in the fridge. So for a quick lunch (or weeknight dinner) I just took that pasta and added it to:

  • Cooked pasta (just boil it to just under al dente)
  • Sliced black olives
  • Semi dried tomatoes, roughly chopped
  • Feta
  • Lemon juice

It was just a matter of warming the lamb in a pat of butter, adding the hot, freshly cooked pasta over the top, then throwing in the tomatoes and olives to warm through, and then top with feta. A squeeze of lemon juice over the top, and off you go.

Feel free to add any other bits and pieces you have in your fridge – I just needed some acidity to cut through the lamb, so I think that other types of antipasto will do: roasted capsicum, charred eggplant, marinated feta…the list goes on.

Kitchen Hand: When life gives you bones

And by ‘life’, I mean your butcher.

When I buy cut meat from my butcher – diced chuck steak, gravy beef, beef mince – I think it’s fair to say that I don’t expect any bones in it. So imagine my surprise when I opened up the bag of diced lamb shoulder from my butcher, only to find that he’s diced everything (presumably with a band saw) with the bones in. The vertebras and everything! I can see where it happened: he was only selling the entire shoulder of lamb, and I had requested diced shoulder. When he said that he could do that for me, he just went out the back, took a band saw to it and gave it to me in a bag.

Now while there’s absolutely nothing wrong with stewing meat on the bone (in fact, it can be tastier), I chose to buy diced meat because I wanted to make a stew that I could pack to work the next day and eat with ease. I’m not about to try and figure out how to politely and delicately pick meat off the bone and then try and neatly get rid of the bones. Most of the time, there’s a scant half an hour for lunch and I don’t have the time to eat an extremely involved one.

So what do you do when you want boneless meat but you’ve been given bone? Well, trying to bone out each piece is going to take you forever and there can be quite a lot of waste involved. You can just put the meat in the stew as is, but like I mentioned, it’s not exactly ideal, especially if you’re trying to pack lunch for the next day. Well, thank goodness this particular type of meat – lamb shoulder in my case – can take a lot of cooking, nay, it needs a lot of cooking.

Rather than stew the meat in the actual stew for 3-4 hours, I put the meat in the pot and covered it with hot stock. I had some ends of onions from the onions that I was chopping, and some ends of carrots that I wouldn’t eat. So I plopped those in with a bay leaf or two, and simmered for about 2.5 hours. It also works if you have a slow cooker. Then I took the meat out and let it cool a little, and simply picked off all the meat off the bone. It all just fell off! I then started the stew, threw the cooked meat in, and finished it off for an hour or so.

Yes, it is a slightly more involved process, but what can you do? I’m not about complain to my butcher, and I don’t want to waste the meat.

And the stock that you’ve simmered the meat in? Just pour it into the stew, and taste all that added flavour! No dramas, and easy packed lunches are here to stay.

What I ate: Pumpkin and Blue Cheese Gnocchi

It’s that time of the week again – when you want something delicious, but you don’t want to go through the hassle and production of spending the whole evening in the kitchen preparing dinner.

And let’s face it – everyone wouldn’t mind something new for their meals. Cooking in big batches gets rid of the need to be cooking all the time, but (I don’t know about you) I tend to have a short attention span when it comes to my meals, and after the second meal of the same thing I’m off looking for other things to feed myself with.

That being said, leftovers are a wonderful thing! I like them because you can always repurpose them in creative ways for your new meal, and you can clear a few little containers of food at one go. For this speedy meal I used:

  • Gnocchi (I made a large batch once and have a bag of them in my freezer. You can use bought gnocchi if you’d like)
  • Roast pumpkin (Leftover from the weekend)
  • Stilton Blue Cheese (I had a hunk just sitting in my fridge)
  • Cream
  • Truffle honey (a treat for me, any honey will do though)

And as with all my other What I Ate posts, there aren’t any quantities. Just get creative! I boiled the gnocchi until it floated to the top of the water, drained it, then in the pot I just emptied, I warmed the pumpkin up (there was oil from the roasting already). And since the pumpkin was roasted with thyme and garlic, there’s your flavour boost that’s already been incorporated into the ingredient. Then I add the hot gnocchi back into the pot, add a little bit of cream, crumbled some blue cheese on the top, and drizzled some honey over just before digging in.

It was creamy and comforting, and used up stuff I just had sitting in my fridge/freezer and pantry. Don’t have roast pumpkin handy? Well just about any roast root vegetables would do – I would use roast carrot, parsnips, capsicum…not so much potato though, because there are potatoes in the gnocchi. But it’s completely up for interpretation! Don’t like blue cheese? Add some cheddar and turn it into a gnocchi version of mac’n’cheese!

The variations are endless, and I’m no longer bored when I need to clear my fridge. Especially when I get into a cooking mood over the weekend and there are containers of random things everywhere.

Easy Lemon Tiramisu – no sabayon!

I’ve still got some Anatoth lemon curd that was sent to me by Beyond the Square – thank you Carrie! I think fruit curds are a fabulous way to recapture that sensation of summer, and the tart lemon curd just brings a spot of brightness to my day.

I saw this great Limoncello Tiramisu recipe from Italian Food Forever that I just had to try out. The best part was that there was no need for a sabayon!! No splitting eggs, no whipping egg yolks and sugar over a bain marie, because the lemon curd did that work for you…this was the easiest recipe for tiramisu ever.

This recipe uses limoncello, and because I don’t have a bottle of that at home, I decided to make my own version out of lemon zest and vodka – which is what you’d use in homemade limoncello anyway.

Speedy Limoncello Recipe

You need:
Lemon Zest of 3 lemons
500ml vodka

Soda siphon

So, inspired by Dave Arnold’s post on rapid infusion, I decided to do a little rapid infusion of my own. Basically the idea is that you put a porous product – in this case, lemon zest – into a siphon with liquid, charge the siphon – I used two chargers of nitrous oxide canisters. What basically happens is that the gas pushes the liquid into the porous item, and the rapid venting pushes all the liquid back out, which completes your infusion. I rested the charged siphon for about 5 minutes before venting, and then rested the vented liquid for about 5 minutes before using.

Super simple limoncello.

Next, the Tiramisu

Lemon Tiramisu 
Adapted from Italian Food Forever

1 Cup Limoncello Liqueur
1 Cup Water
1/2 Cup Sugar
3/4 Cup Lemon Juice
20 Savoiardi or Lady Finger Cookies (1 Package)

For The Mascarpone Cream:
1 1/2 Cups Cream
1/2 Cup Sugar
1 pot/jar of lemon curd
1 (10 Ounce) Jar Lemon Curd, divided

Bring the liquer, water, sugar and lemon juice to the boil, and reduce slightly.

While the syrup is cooling, mix your mascarpone into the lemon curd. Save some to serve on top of the final dish – I used about 1/2 a pot at this stage. In another bowl, whip the cream and sugar to soft peaks, then fold in your mascarpone and lemon mixture.

Then it’s all an assembly job – roll the savoiardi in the syrup (not too long or they’ll fall apart), lay them in a single layer on your serving dish, lay the mascarpone cream over the top, then repeat the process. Grate some lemon zest over the top and voila! You have an easy, delicious dessert that helps you cling to the memories of summer evenings on the front porch awash in golden setting sunlight.

I served mine with a dollop of lemon curd over the top and some walnut pieces, because I like that crunch.

You will have some syrup left over, which you can use in other desserts. It also makes for a refreshing summery lemonade when mixed with a little ice and soda water.
