Mamak has long lines out the door filled with die-hard fans of their roti, but personally, I’m a Sambal Sotong sorta girl. It’s part nostalgia, part comfort – firm-yet-tender pieces of cuttlefish get fried off in a spicy, dried shrimp-based chilli sauce that’s unique to Southeast Asia. So delicious, and best had on a hot bed of steaming rice.
