So we all know that I hate HATE food waste. And part of how I deal with leftovers at home is to transform it into something else entirely, so that I can use up every last bit of food!

Well, I recently made my own black garlic, AND made my own butter. So what do you do with a MASSIVE amount of garlic and butter sitting in your fridge? Garlic butter. Yes, it’s that easy.

Black Garlic Miso Butter Recipe

I adore the savoury flavours of miso, and I think that it brings out a certain richness in the black garlic very nicely. And that winning combination applies itself to a whole lot of other things, too. Dressings, sauces…you name it, we can make it.

But for now, just the butter. A butter that will sit waiting in your freezer to lift an otherwise boring meal with rich, savoury notes. Luxurious, dahling!

Black Garlic Miso Butter Recipe

What happens when you have homemade black garlic and homemade butter? Black garlic miso butter, of course! Super quick, easy, and freezer friendly, for those garlic butter emergencies!
Total Time 10 minutes

Ingredients
  

  • 250 g butter
  • 10 cloves black garlic more, if you like it
  • 2 tbsp miso heaped
  • 1 tbsp lemon juice

Instructions
 

  • Place all ingredients in food processor and process till smooth and mixed.
  • Pipe/spread onto cling wrap or baking paper, and shape into a log.
  • Refrigerate or freeze till firm, and wrap in foil to store.

At the risk of tooting my own horn, I HAVE TO tell you that this black garlic miso butter is good. This black garlic miso butter is SO GOOD that I just eat pieces of it. Straight. Bread optional. One of my best works!
