I love cooking with kids, but with no kids of my own, I only ever get the opportunity when I visit my cousin in Melbourne. These kids are a ravenous pair, and I’m such a proud aunt for it. But I know that as much as cooking with kids is really fun, it can be time consuming and messy, and often is left in the ‘too hard’ basket.

So why not use the appliances we have at our disposal? The food processor is my best friend in the kitchen, and these chewy cookies are my new favourite thing to make.

Food Processor Cookies:
Makes 24 small cookies

125g butter
150g (1 cup) self-raising flour
112g (3/4 cup) plain flour
226g (1 cup) brown sugar
55g (1/4 cup) white sugar
1 large egg
1 tsp vanilla extract

Heat the oven to 200C (180C fan forced)

Measure the butter and sugar into the bowl of the food processor, pulse briefly till mixture begins to resemble coarse breadcrumbs. Don’t worry if the butter is still in a huge chunk, it’ll get broken down in the next step.

Break the egg in and run the food processor on medium till the butter is incorporated and all the sugar is dissolved, stopping once in a while to scrape down the sides.

Add the vanilla and flours all at once, and pulse till mixture is just combined.

Grab a heaped teaspoon of cookie mixture and roll it between your hands. Place onto baking tray and flatten slightly, making sure that the cookie dough is spaced out enough to spread a little.

Bake for about 6 minutes, or till the edges are lightly golden, and cool.

Enjoy with a tall glass of milk!!

Now these are of the plain vanilla variety, but feel free to use this as a base for chocolate chip cookies, oatmeal and raisin cookies, peanut butter cookies…anything that tickles your fancy!! Let your creativity run free, or maybe hold a vote amongst the kids. Their little satisfied grins are absolutely worth it.
